For outer layer
Fennel seeds/saunf-1/2 tsp
Mustard seeds-1/2 tsp
Whole coriander-1/2 tsp
Red chilli powder-1 tsp
Turmeric powder-1/4 tsp
Salt to taste
Chat Masala-1 tsp
Garam masala-1/4 tsp
Coriander powder-1/2 tsp
Oil for deep frying
Oil- 3 tbsp for masala
coriander & mint chutney
For outer layer of samosa we will take 3 cups of maida with salt & oil.Then we will take small amount of water gradually and knead the dough.But important tip is do not over knead the dough,gently fold it then apply oil at last and cover with a damp muslin cloth.Set aside for about 1/2 an hour.
For masala preparation we will arrange all the ingredients,we will start by crushing cloves,black pepper & coriander seeds.
Heat 3 tbsp oil in a wok ,add in asafoetida,crushed cloves,black pepper & coriander seeds.
Then add saunf,mustard seeds.Let them crackle.
In a grinder jar crush onion,garlic & green chillies,when mustard seeds are done then add this and fry with help of pinch salt till light golden brown colour.
Now add 3-4 tbsp of water,then add all above mentioned powdered masala.Fry till oil separates.
Then add mashed potatoes,mix well.
Sprinkle some coriander leaves and set aside to cool it down.
Now come over dough 🙂,gently punch it and knead it.
Make lemon size balls, on a flat board/platform whatever you use to make chapati.With help of rolling pin flat ball in a naan shape.Use maida powder to make this samosa chapati.
Cut it in two parts.In a separate ball add 1 tbsp of maida and couple of spoons of water ,to make a paste.
Take one part of samosa chapati.Apply some maida paste on half side of chapati,then give a cone shape,and fill potato filling in that cone ,then seal with maida paste.Give a samosa shape.
Like this make all samosas,Heat oil for deep fry,over medium hot oil drop samosa,fry till golden brown in colour.
Take out on tissue paper.
7. In a serving plate serve with chutney,sauce etc. Enjoyyyy
