Rajasthani Aalni
Ingredient
*Fenugreek dry(green maithi)-2 handful
*Rice-2 tbsp
*Broken wheat(rava)-2 tbsp
*Chana daal-2 tbsp
*Moong daal-2 tbsp
*Maze flour/besan-1 tbsp
*Papad any -1/2 piece
*Green chilli crushed-3-4
*Garlic crushed-handful
*Black pepper crushed -3-4
*Cloves crushed 2-3
*Asafoetida(hing)-a pinch
*Cumin seeds-1 tsp
*Red chilli powder-1.5 tsp
*Turmeric powder-1/2 tsp
*Salt to taste
*Oil-2 tbsp
*Water-4 cups
Process
*First we will wash & soak all grains(moong,chana,rava,rice)for at least 1/2 hour.
*Heat oil in a pressure cooker add asafoetida,powdered black pepper & cloves.Then add cumin seeds,let it splutter.
* Now add crushed garlic,cook till it turns light brown.
*Then add crushed green chilli saute it for couple of min.
*Add 1/4 cup of water then add red chilli powder,turmeric,salt.When oil start to separate in masala start adding moong daal,chana daal,rava,rice & mix maze flour in maithi then add so that flour won’t make any lump.
*Here we have added 4cups of water but you can add more according to you.
*Add citric acid or lemon juice
*For additional taste we added crushed garlic to enhance flavour but this step is just optional.
*Boil it if you require more water here you can add then cover cooker with lid & take 2 whistles then turn off heat ,when all pressure go down then open cooker lid.
*Serve in a serving bowl.It goes best with makki ki roti(maze flour roti) but you can serve with wheat chapati too.Enjoyyyy:)
