Restaurant Style Dum Aloo

Ingredients
- Baby Potatoes- 250 gm
- Garlic pods- handful
- Onions- 3
- Green chillies-2
- Tomatoes- 2
- Peanuts- 50 gm
- Cashews- 50gm
- Asafoetida a pinch
- Oil-2-3 tbsp
- Black pepper-5 crushed
- Cloves(laung)-3-4 crushed
- Mustard seeds-1/2 tsp
- Fennel/saunf seeds-1/2 tsp
- Bay leaf- 1
- Red chilli powder- 2 tsp
- Turmeric powder- 1/2 tsp
- Salt as per taste
- Cinnamon powder- 1/2 tsp
- Kasoori methi-2 tbsp
- Curd- 1 bowl
- Tomato Sauce- 2 tbsp
- Coriander leaves- 2-3 tbsp
- Oil for deep fry
- Water to boil
Process
Take Baby Potatoes wash them before adding them to boiling water.Boil Them for 4-5 minutes. After that remove from water and let them cool.Then peel the skin of potatoes & prick them with toothpick, fork, knife from all sides of a potato.
Add peanuts, cashew nuts in a grinder and then make powder, take out in a bowl set aside. In the same grinder crush garlic,onion & green chilli and set aside.
Heat oil for deep frying ( you can do shallow fry or pan fry).Put all potatoes in hot oil and fry till golden brown in colour.Take them out on tissue paper so that extra oil will be absorbed.
In this same wok we will prepare masala, for this remove excess oil and keep only 2-3 tbsp of oil.
add asafoetida, crushed black pepper & cloves.Then add bay leaf, splutter mustard seeds and fennel seeds.
Add crushed onion garlic green chilli paste, let it cook till light brown in colour .Then add tomato puree, cook it for 2-3 min.then add some water then red chilli, turmeric,salt,cinnamom powder and cook it till oil separates.
Now add tomato sauce, its quite optional.Then add curd and quickly stir it otherwise lumps will be formed.Add peanut and cashew powder, mix it well then add water according to your taste .Crush kasoori methi by hands and add it.
When water started to boil then add potatoes.Sprinkle some coriander leaves.Cook it for another 3-4 min.Then turn off flame.
Serve it with roti, chapati, naan etc. Enjoyyyy
