Puliogare Rice
Ingredients
For Puliogare Powder
- 2 Tbsp- Oil
- 3/4 Cup – Fresh Coconut
- 2 Tbsp – Chana Dal
- 2 Tbsp – Urad Dal ( white )
- 1 Tbsp – Fenugreek Seeds
- 2 Tbsp – Coriander Seeds
- 1/4 Tsp or 20-25- Black Pepper
- 1 Tsp – Mustard Seeds
- 1 Tsp- Cumin Seeds
- 5-6 – Whole Red Chillies
- 1/4 Cup – Sesame Seeds
- A Pinch – Asafoetida
For Rice
- 1 Tsp – Oil
- 1 Tsp – Chana Dal
- 1 Tsp – Urad Dal
- 1 Tsp – Mustard Seeds
- 1 Tsp – Cumin Seeds
- 1 – Green Chilli Slit
- 15-20 – Curry Leaves
- 1/2 Cup – Peanuts
- 1 Whole Red Chilli
- 1/2 Cup – Tamarind Juice
- 1/2 Tsp – Turmeric Powder
- 1 Tsp – Jaggery
- Salt to taste
- 2-3 Cups – Cooked Rice
Method
- Heat oil in a pan then add freshly grated coconut and roast it till light brown in colour. Then keep this mixture aside.
- Again heat 1 teaspoon of oil in a pan and add Chana Dal, urad Dal now fry till its colour change.
- Now add fenugreek seeds, mustard seeds, coriander seeds, black pepper, whole red chilies, cumin seeds, asafoetida and sesame seeds. Now fry them very well and grind it ( coconut too ) into powder and keep it aside.
- Puliogare Powder is ready.
- Heat a pan with 1 teaspoon of oil again and add 1 teaspoon of Chana Dal , 1 teaspoon of urad dal , 1 teaspoon of mustard seeds, cumin seeds, green chilli, curry leaves, peanuts, red chilli and fry it.
- Then add tamarind juice half cup, into this liquid add turmeric powder ,salt according to taste and jaggery around 1 teaspoon.
- Cook it very well till oil separates..
- Now add cooked rice around 2-3 cups, mix very well. Now add in Puliogare Powder around 2-3 Tbsp or you can adjust according to your taste. Mix it evenly and serve it with coconut chutney.
