How to make Rajasthani Talma Baati

Mix Vegetable curry with Talma baati

Ingredients
For Bati Dough
1. Wheat Flour- 2 bowl
2. Suji- 2 tbsp
3. Oil- 3 tbsp
4. Turmeric- 1/2 tsp
5. Salt as per Taste

For sabji
Mix vegetables choppped- (lauki,turai,gawarfali,baingan,potato)
Oil- 2 tbsp
Asafoetida-a pinch
Cumin seeds- 1 tsp
Mustard seeds-1 tsp
Garlic crushed- 7-8 pods
Green chillies chopped-3-4
Onion chopped-1big
Tomato chopped-1 big
Red chillies powder-1 tsp
Turmeric powder-1/4 tsp
Coriander powder-1 tsp
Salt to Taste
Sambhar Masala-2 tsp
Citric acid/lemon juice
Besan-3-4 tbsp
Water-as required
Red chilli powder-1/2 tsp
Turmeric-1/4
Salt to taste

Process
Take all ingredients for bati in a mixing bowl, add water gradually and make a soft dough.Keep it aside for 15-20 min.
After 15-20 min.knead dough for 2-3 min more, then take small size ball and give round & flatten shape to it.Make all batis like this.Heat oil for deep frying ,when oil is heat enough then drop batis one by one and fry till golden in colour.Take out in a plate.
For sabji take a pressure cooker heat oil then add asafoetida, cumin seeds, mustard seeds.After that add garlic when it gets light brown then add green chillies.
Then time to add onion and cook till it gets translucent, then cook tomatoes.
Now add little water so that masala will not burn, so add in red chilli powder, turmeric, coriander powder, salt and sambhar masala.Now cook this masala till oil separates.
Finally add all vegetables, add water around couple of glasses, or you can adjust.Let it boil for sometime.
Meanwhile we have to make another besan dough for this sabji.For this take besan,add red chilli powder, turmeric & salt.Make stiff/tight dough out of it.After that make small balls out of it.Then fry in hot oil, these balls we have to add in sabji.So add all balls and drop in pressure cooker then close the cake lid and take whistles around 7-8.When all pressures goes down then open cooker lid.We want it to be like mushy but if you do not want such texture then do not over cook.Finally add lemon juice.
Serve it with Talma/fried batis. Enjoyyyy
