Rajasthani Makai Dhokle in Pressure Cooker

Ingredients

  1. 4 Cups / 500 gm – Makai / Maize Flour
  2. 2 Tbsp – Papad Khaar
  3. 50 gm/Handful– Peanuts
  4. 2 Tbsp – Chana Daal
  5. Handful- Green Peas
  6. 2 Tbsp– Sesame Seeds / Til
  7. 1 Tsp– Fennel Seeds / Saunf
  8. 1 Tsp– Cumin Seeds / Jeera
  9. 1 Tsp– Carom Seeds/ Ajwain
  10. 1/2 Tsp– Ginger Paste
  11. 1 Tsp– Green Chilli Paste
  12. 2 Tsp– Red Chilli Powder
  13. Salt to taste
  14. 1 Tsp– Garam Masala
  15. 1 Cup– Chopped Coriander Leaves
  16. 1 Cup– Fenugreek Leaves / Methi
  17. 2.5 Cups– Water

Method

First boil water in a pot, then add 2 Tbsp of papad khaar.And boil it for 1-2 minutes.Then put it aside, we need luke warm water only .

In a big plate add all above mentioned ingredients, and mix them well.Now add gradually warm papad khaar water and knead semi soft dough.

Give a rest of 5 minutes to this dough, then take out a big ball size of dough and give a shape of bowl as shown in the picture.While doing this you can apply some oil too.

Now take a pressure cooker and put one bowl and a sieve to steam dhokla .Then add 2 glasses of water.

Now place all dhokla on sieve one upon one.Close the cooker lid and take 8-10 whistles on low flame.When it’s pressure is gone completely then open the lid take out dhokla.

These dhoklas are traditionally served with urad daal, til / sesame oil jaggery etc.

Note:

Do not add turmeric in this recipe.Actually Turmeric can not be used in papad khaar recipe.
